Hey guys, so today I’m bringing you a recipe that I like to make when I’m being a little more healthy but still want a delicious treat. My Healthy-ish Chia and Cacao Brownies are sure to hit the spot while being a little on a healthier side. Don’t worry, they’re just as gooey and yummy as normal brownies 🙂
I’m keeping this recipe pretty simple but by all means, feel free to add in some nuts or chopped up chocolate for extra yum (white chocolate chunks would be amazing!).
What you’ll need:
60g Coconut Flour
110g Coconut sugar
50g Cocoa Powder (I used the naturya organic cocoa powder)
110g Softened Butter (or Dairy free spread)
20g Chia Seeds
2 Large Eggs
1.5tsp Baking Powder
1/4 tsp Salt
How to make the yumminess:
Preheat oven to 150C
Soften butter in the microwave
Add everything into your KMix or bowl and slowly mix together
Line a tin with parchment paper
Pour in the rich molten goodness
Bake for 20-25 minutes
Allow to cool (or eat immediately with a scoop of ice cream…YUM!)
I’ve used my Kenwood KMix to make these scrummy morsels but if you don’t have one then a bowl and spoon would work fine too. I do find getting a good mixer helps with blending everything into a smoother mixture.
I popped on a little bit of desiccated coconut on a few to see if it would toast up nicely while cooking, I can say I’m really happy with the result!
**Sorry I’ve been MIA for a while now, things have become hectic in life and the final run up to our wedding (just over 5 weeks to go eeeeek).
